Cookie Dough Energy Balls
Ingredients:
1 cup oatmeal (I used old-fashioned oats)
1/2 cup peanut butter (or any nut/seed butter)
1/2 cup ground flaxseed
1/2 cup chocolate chips (optional but yummy))
1/4 cup honey
1 Tbsp chia seeds
1 tsp vanilla extract
How to:
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.Once chilled, roll into balls of whatever size you would like. Keep refrigerated or in the freezer.Makes about 20-25 balls. I keep them in the freezer and the kids will eat them straight from there!!
